KEFALOTYRI (GOAT MILK)
The oldest cheese of all. The mentor of the new cheese production it is a little salty, sharp but always has a pleasant taste. Served alone or best accompanied with fruit and wine. It is made from 100% goat milk or from goat and sheep milk combined.
Kefalotyri from goat milk: A mildly more salty cheese from the rest, with a strong flavor that is best served with a white wine and some fruit.
Kefalotyri from sheep and goat milk: A milder taste compared to the goats cheese. Best served with a red wine, and if available with a cold meat platter.
